Open EVERY DAY from 11:00 AM – 9:00 PM, Chile Verde is a locally and family-owned restaurant that prides itself on serving authentic Mexican food. “We stay as close as possible to the real Mexican food taste,” says Guillermo Cuevas.
Guillermo moved his family from California in 2006 to operate the restaurant, which originally opened in 2002. When asked why, after 18 years, he still chooses to have his restaurant in the North Shadeland community, Guillermo responded, “We have invested so much love and so much of our time—as a family—into this place.”

And by this place, he doesn’t just mean the restaurant. Chile Verde is a long-standing supporter of our community. From feeding police, fire, and military for free, to hosting fundraiser nights for area schools and sponsoring little league teams.
“I love seeing our regular customers, they are wonderful people,” he adds as he shares stories of how much support he has received during the pandemic.
The dining room is now open, but Chile Verde also offers carryout.
One important thing to remember when placing a carryout order—and this is true for whatever local restaurant you order from. Guillermo suggests calling Chile Verde directly. While delivery services are a great convenience, they significantly reduce a restaurant’s proceeds on food sold. “The extra step of ordering directly from us really makes a difference.”
